Beef Tenderloin Steak w Blue Cheese Topping Courtesy Of: Beef Board and National Cattleman's Beef Association Beef Tenderloin Steak w Blue Cheese Topping Serves 4 4 Steaks cut from a Butcher's Block tenderloin 2 ml or 1/2 tsp Imperial/McCormick salt 10 mL or 2 tsp Sysco Natural fresh parsley, chopped Topping 25 mL or 2 Tbsp Cream cheese 20 mL or 2Tbsp Blue cheese crumbles 20 mL or 4 tsp Plain yogurt 10 mL or 2 tsp Sysco Natural onion, minced dash Imperial/McCormick ground white pepper Combine topping ingredients in small bowl. Rub steaks with garlic and place on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil 13 to 16 minutes for medium rare to medium doneness, turning once.

One to 2 minutes before steaks are done, top evenly with topping. Season with salt and sprinkle with parsley.
