Spring Greens With Honey Dijon 2 Servings 150 g or 3/4 cup Spring Mix 150 g or 3/4 cup Leaf lettuce 60 mL or 4 Tbsp Fresh chives 2 Pears 6 Bacon strips 60 mL or 4 Tbsp Pecans Asiago or camembert cheese, finely chopped Dressing 45 mL or 3 Tbsp Whole grain mustard 45 mL or 3 Tbsp Honey Pinch Salt Pinch Sugar 15 mL or 1 Tbsp White vinegar 45 mL or 3 Tbsp Canola oil Wash Spring mix and cut leaf lettuce and put it in colander under cold water. Put the colander in large bowl and let the water drip from the lettuce while you prep other ingredients.

Put the six strips of bacon on a baking pan and into the oven at 375F, bake until it reach a light brown, usually around 15-20 minutes. Let stand and cool, before chopping it to fine pieces for the salad.

Cut chives and place them into small bowl and return them to the refrigerator. Chop pecans into smaller pieces. Then place on a baking sheet and bake then in the oven at 375F until golden brown, usually about 3-5 minutes. Let cool before combining to your salad.

Combine the dressing ingredients in a bowl and whisk together until smooth. In a larger bowl combine the lettuces, bacon, & pecans. Pour over a liberal amount of dressing and toss until the lettuce has been covered lightly. (Add desired amount of dressing.) Julienne one pear and toss with other ingredients cut the other pear into sections to garnish the plates.
