Saskatoon Berry Custard Courtesy Of: Leah Hepting, SIAST Saskatoon Berry Custard 6 - 10 tarts Custard 10 cups Whipping cream 27 Eggs 5 cups Sugar 1/2 cup Flour 6 tsp Vanilla 1 Tbsp Cinnamon 3 lbs Saskatoon berries Short Crust 44 oz All purpose flour 22 oz Icing sugar 22 oz Margarine 5 Whole eggs To prepare crust: Mix all ingredients in large mixing bowl until incorporated. Oil and flour spring form pans, press mixture into pans. Prebake pastry for 10 minutes until lightly browned. Pour custard then bake.

To prepare custard: crack eggs, add the sugar, cinnamon, four and vanilla. Mix all ingredients together, then add the whipping cream. Fold in Saskatoon berries. Pour into pre baked pastry shells and then bake at 325 degrees F for approximately 45- 50 minutes.
