Harvest a la Mode Courtesy Of: QTG (Quaker Tropicana Gatorade) Harvest a la Mode Serves 9 Crust 1 cup Unsifted all purpose flour 1/4 cup Firmly packed brown sugar 1/3 cup Soft butter or margarine Topping 2 Eggs 3/4 cup Firmly packed brown sugar 1 tsp Vanilla 1/4 cup Unsifted all purpose flour 1/2 tsp Baking powder 1/2 tsp Salt 1/2 tsp Cinnamon 1/2 tsp Nutmeg 2 cups Peeled, cored, chopped apples 1 cup Quaker Harvest Crunch Cereal , Original Blend 3/4 cup Flaked or shredded coconut For the crust, combine flour and sugar. Put in butter until mixture is crumbly. Press onto bottom of ungreased 2.5 L (9") square cake pan. Bake in preheated 180 C (350 F) oven 20 minutes of until lightly browned.

For the topping, beat eggs until thick and light. Gradually beat in sugar and vanilla.
Combine flour, baking powder, salt, cinnamon and nutmeg. Toss flour mixture with apples HARVEST CRUNCH and coconut. Fold in egg mixture. Spread on top of baked crust.
Return to oven and bake an additional 40 to 45 minutes. Cool slightly. Cut into squares and serve warm with a scoop of vanilla ice cream.
