Vegetable Biryani Courtesy Of: Campbell's Foodservice Vegetable Biryani 16 servings, each portion 8oz/250 ml 1 pouch Campbell's Indian Foundation 180 ml or 3/4 cup Butter 4 Onions 1 L or 4 cups Diced tomatoes 1 L or 4 cups Rice 125 ml or 1/2 cup Raisins 1 L or 4 cups Water - optional Roasted cashews, cilantro for garnish Caramelize the onions in butter in a large frying pan on medium heat for 20 minutes or until a deep brown.
Add the rice and stir until coated. Add the diced tomatoes, Indian Foundation, raisins and water. Simmer covered on low heat stirring occasionally to prevent the rice from burning.
The biryani is ready once the liquid is absorbed and the rice is cooked, usually after 35 minutes.
Garnish with caramelized onions, roasted cashews and cilantro.
