Dungeness Crab Cakes Courtesy Of: David Hammonds of The Empress Hotel Dungeness Crab Cakes 1 1/2 lbs Dungeness Crab 1/4 cup Red onions, diced small pieces 2 Tbsp Mayonnaise 1 tbsp Cilantro, chopped to taste Tabasco to taste Worchestershire 1 cup Cooking oil 1/2 cup Cornmeal Combine all ingredients until evenly mixed. Coat cakes by dredging in cornmeal.
Places cakes into a sauté pan with 1 tbsp hot oil; brown both sides.
Finish cooking in 350 F over for 3 to 6 minutes.
