Cajun Chicken Courtesy Of: QTG (Quaker Tropicana Gatorade) Cajun Chicken 10 Servings 1 1/2 lbs Boneless chicken breast cubed 1 cup Chopped Spanish onion 1 Green pepper, chopped 1 Red peper, chopped 1 clove of garlic, crushed 1 Tbsp Vegetable oil 28 oz Stewed tomatoes 14 oz Chicken broth 1 cup Long grain rice 1/2 cup Quaker Oat Bran hot cereal, uncooked 1/2 tsp Black pepper 3/4 tsp Cajun Seasoning 1/2 tsp Cayenne 1/2 cup Shredded low fat mozzarella Preheat oven to 325 degrees F. Place vegetable oil in a medium sized pot and heat on stove.
Add chicken cubes and cook until brown.
Place chicken in a 2 litre square baking dish.
In the same pot, sauté onions and garlic. Add pepper, stewed tomatoes, chicken broth, Quaker Oat Bran, rice and spices. Mix well.
Add mixture to chicken and stir.

Place baking dish, covered into oven and bake 40 minutes, stirring occasionally. Check rice for doneness.

Optional: add low fat cheese to the top of mixture and bake a further 5 minutes. Serve hot.
