Smith Sizzlin Cuban Stir Fry Unavailable 1.36 kg or 3 lbs Chicken breast, boneless, skinless 60 mL or 1/4 Cup Saucemaker, Zesty Orange, Ginger Sauce 60 mL or 1/4 Cup Saucemaker, Cajun Sauce 180 g or 6 oz Snakebeans 4 Shallots 1 Cinnamon stick 10 mL or 2 tsp Sesame oil 60 mL or 4 tbsp White wine 30 mL or tbsp Light soya sauce 6 Fresh figs 1 Yam, sliced To prepare figs, poach with Saucemaker Zesty Orange Ginger Sauce and white wine for 1-2 minutes. Reserve sauce.

Brush chicken pieces with Saucemaker Cajun Sauce. Grill both sides of chicken and slices of yam on medium-high until done. Chop into bite size pieces.

Heat sesame oil in wok, add shallots, cinnamon stick, yams and snakebeans. Stir fry for a couple of minutes.

Add Saucemaker Zesty Orange Ginger Sauce and white wine reserve from step 1. Add soya sauce.

Add chicken and figs until heated through.

Serve over saffron rice and garnish with Chinese chives.
